The roots of the ma-kombu are King among the kombu as they have the highest nutrient content. Ne-combu is thick, so it is suitable for long simmering cooking such as Oden and stew. Even after cooking for a long time, the ne-kimbu doesn't melt in but becomes nice and soft giving the broth a full umami taste.
