Black rice is byword for ancient rice, and one of the original kinds of ancient rice cultivated each area in Asia. Its characteristics are sticky texture and rich taste. Specific black colour, people say, comes from anthocyanin related colour, one of the polyphenol containing in skin of its brown rice. Compared with normal brown rice, it is also said that it has rich in Vitamin and minerals such as Phosphorus, and Kalium. In Chinese medical cooking, it is well used as nutritional fortification and long life rice. On book of Ming dynasty “Honsou koumoku”, it is also written that black rice is the food feeding the body and making up blood. Cooking with rice, it gets rich taste. *Mix 10% of this black rice in normal rice and cook together, the rice will get like festive red rice by bleeding the colour of black rice.
