The artisan who knows about sesame very well has selected this golden sesame. It naturally sprouts in running water with low temperature. The sesame with skin has been roasted slowly, while adjusting heat depending on various components such as the size of sesame, temperature, moisture. After that, it has been carefully crushed several times to extract oil and ground many times with millstone to get it fine and creamy. This is how we get smooth texture for pasted sesame.
The seed germinates while enzyme degrading nutrition such as fatty ingredient and protein, and changing into energy. When the protein is degraded, amino acid will increase. When carbohydrate is degraded, not only sugar group like oligosaccharide will increase, but also a part of the sesamin, which is one of the components of sesame lignan, will change into “sesamenol”. Golden sesame is called king of sesame. Its taste gets deeper thanks to its sweetness and it has much natural energy.
Use for sesame tofu or dressing. Also good to use as secret ingredient for curry.
