The Banshu area, in the west of Harima, Hyogo prefecture, is one of the outstanding production centres of wheat noodles in Japan. Making the most of their techniques of noodle production, wheat grown by Mother Nature is harvested and manufactured into noodles. The soil naturally has the power to grow healthy plants which in turn have the power to absorb nutrients. By cultivating such wheat, there is no need for chemical fertiliser or synthetic agricultural chemicals. Farming methods, which derive from and activate the natural ability of the soil, enable the reproduction of traditional flavours of wheat in the present day.
